Every time we bring this dish to a party, it is an instant hit! It’s popularity is no surprise though, seeing as we’ve been making this for years, and have been thoroughly obsessed with it ourselves. Everyone expects tortilla chips and salsa at a party, but this gives them a fun twist on a party staple. We love how the cranberries make this salsa so fresh and vibrant, and serving it over a brick of cream cheese with some crackers just makes it all the better. This recipe is so quick and easy to make, that the hardest part is merely choosing what to use to dip! Pick out your favorite crackers or chips, and get dipping!
CRANBERRIES:
Fresh cranberries are commonly sold in the grocery store in 12 ounce packages. They are most often found in the fall right after the cranberry harvest. When working with fresh cranberries, rinse them under cold water. Run your fingers through the cranberries and pick out any that are soft or mushy. Rinse the cranberries again and proceed to use them in your recipe.
If you would like to use frozen cranberries, you will need to thaw them completely before using. We highly recommend fresh cranberries rather than frozen in this recipe, because thawed frozen cranberries will be a bit mushier.
GINGER TIP:
This recipe calls for fresh ginger. When using ginger it is easiest to cut off any gnarled spots before peeling. Once peeled you can grate it easily on a hand grater. Once it gets down to a nubbin of stringiness just toss the stringy mess away.
SPICE LEVEL OF BEST CRANBERRY SALSA:
The jalapeños give this salsa a nice kick, but you are welcome to make this according to your own taste preferences and use more or less jalapeño.
SERVING SUGGESTIONS:
A common and popular way to serve cranberry salsa is over a brick of cream cheese. You can also serve it up plain, as you would any salsa. It pairs well with Wheat Thins, Ritz crackers, and tortilla chips.

STORAGE INSTRUCTIONS:

In case you missed it, there is a new holiday trend already spreading like wildfire all over the Internet, and it might be the most delicious one yet. Living under a rock? Not up with the times? While you’ve been drinking hot apple cider, people have already moved onto hot chocolate bombs that turn your basic mug of hot cocoa into an outrageously festive event.
A hot chocolate bomb is a hollow sphere of chocolate that’s been filled with all the makings of the perfect single batch of hot chocolate. Each bomb is fortified on the inside with hot chocolate mix (can be store-bought or we suggest making this Southern grandmother’s tasty homemade mix) and any add-ons the sugar plum fairy could dream of, like marshmallows, peppermint pieces, toffee bits, or holiday sprinkles. After being dropped in a mug with hot water or milk poured over, the outer chocolate mold melts, breaks open, and explodes with your cocoa-infused ingredients. Like a bath bomb, but way tastier. While you can find hot chocolate bombs in certain specialty food stores, it’s really more fun to make your own at home, which is what led to the trend going TikTok famous. People are making the craziest, most indulgent hot chocolate bombs you could imagine—and it’s not as hard as you think. All you need are these $6 baking molds from Amazon that make easy work of the hollow chocolate balls—and to follow the quick tutorial below.
How to Make Hot Chocolate Bombs
Ingredients
Chocolate chips (can be semi-sweet, dark, or white, depending on your preference)
Hot chocolate mix
Any add-ons you want inside (we suggest mini marshmallows, roughly crushed peppermint sticks, salted caramel pieces, and anything else that tickles your fancy)
You’ll also need silicone molds like the ones above and something to brush the melted chocolate, such as a basting brush. Many prefer to assemble the hot chocolate bombs inside a muffin tin lined with baking cups, which helps make less of a mess.
Directions
Melt the chocolate chips in a glass bowl in the microwave, stirring at 15-second intervals until smooth.
Drop a dollop of melted chocolate into the mold and using a spoon or basting brush, smooth around the inside of the mold until you have what looks like a little chocolate bowl. Repeat with as many other molds as you want to make. You’ll need two halves for every bomb. (Note: Work quickly to avoid the chocolate getting too thick.)
Repeat a second coating of chocolate on all molds—both layers should be thin!—and then set in the fridge for about 45 minutes. Chocolate should be solid and dry.
Heat a skillet on extra low on the stove-top and set out the muffin tin with baking cups for assembling. Take one of the chocolate molds and warm the seam where you’ll be sealing the two halves together—just for a few seconds.
Place into a baking cup to hold in place and fill the inside of the mold with one serving of hot chocolate mix and your toppings. Warm the seam of another chocolate mold and seal the two halves together to close the hot chocolate bomb with goodies inside. (Tip: If the seams aren’t sticking together, you can also spread or pipe a thin layer of leftover melted chocolate along the seams and press together.)
When ready to use, place in a mug and pour hot water or milk over to watch your hot chocolate bomb melt into the most festive hot cocoa ever. Stir if needed! And make sure to film it!

Making your own cranberry sauce or cranberry jelly is literally as easy as boiling water.
Cranberry sauce or cranberry jelly is a relish-style condiment made out of cranberries, sweetener, and water. Variations can include orange zest and warm spices such as cinnamon or nutmeg. It is traditionally served as a Thanksgiving dinner side dish.
Each of the following tried and true recipes can be halved if you prefer a smaller batch, or doubled if you have a large family.
How to Make Your Own Cranberry Sauce
Combine two cups each of sugar and water in a heavy saucepan over medium heat, bringing it to a rolling boil.

Add the cranberries and return to a rolling boil, then reduce the heat down to a low boil.

Cook for five minutes to make a rich, thick cranberry sauce, or continue boiling for 10 minutes, lightly mashing the berries with a potato masher as they cook if you’d prefer to make cranberry jelly.
If making jellied cranberry sauce, strain the mixture through a wire mesh sieve, pressing the cranberries to express the pulp. Otherwise, cool the sauce for ten minutes in the pan, then transfer to a serving dish. Cool completely before refrigerating.

Easy Homemade Cranberry Sauce Recipe
This simple stove-top version takes less than ten minutes to prepare.
You’ll Need
4 cups cranberries
2 cups sugar
2 cups water
In a medium saucepan combine sugar and water, bringing it to a boil over medium heat.
Boil for 5 minutes.
Add the fresh cranberries and boil without stirring until the berries pop; (approx 5 minutes). Remove from heat, pour into a serving dish, cool and refrigerate until you’re ready to serve.

Instant Pot Cranberry Sauce
You’ll Need
1 lb cranberries
1/2 tsp orange zest grated
1/3 cup orange juice or water
pinch of cinnamon
1 cup sugar
Combine cranberries, orange zest, cinnamon, and orange juice (or water) in the instant pot, stir.
Sprinkle the sugar evenly over the top of all ingredients, but do not stir.
Close the lid of the instant pot and set valve to sealing.
Set the instant pot to “Manual” at high pressure for 2 minutes, release the pressure naturally for 5 minutes.
Release remaining pressure manually in short bursts, else the sauce can splatter out along with the steam.
Open the lid of the instant pot and stir well.
If you want the sauce to be sweeter, you can add additional sugar (1 tablespoon at a time).
Transfer the sauce into a serving dish, cool completely, then refrigerate until serving time.
Appetizer idea: Place a block of cream cheese on a plate, spoon cranberry sauce liberally over the top and serve it with butter crackers, wheat thins, etc. It’s delicious!

Slow Cooker Cranberry Sauce
You’ll Need
4 cups fresh cranberries
3/4 cup orange juice
3/4 cup water
1/2 cup granulated or brown sugar, or your preferred sweetener (adding more/less to taste)
optional add-ins: a splash or bourbon or red wine, orange zest, a pinch of ground ginger, a pinch of cinnamon and cloves, some chopped walnuts, or a splash of vanilla extract
Combine all of the ingredients in the slow cooker, stirring to combine and set on high for 3 hours or on low for about 8 hours. Transfer the sauce into a serving dish, cool completely, then refrigerate until serving time.
The sauce will be quite runny while it’s still hot, it will thicken once it cools and chills.Cranberry Sauce vs Cranberry Jelly, What’s the Difference?
Cranberry sauce is not the same thing as cranberry jelly. The sauce version in more fluid, whilst the jelly version is more solid and will retain the shape of the container it is placed in.
Cranberries contain a high amount of natural pectin. The longer the berries are cooked, the more pectin is released. Pectin polymers bind together, which create structure and firmness. Therefore, jellied cranberry sauce can be made by simply increasing the cooking time of the recipe.

How to Make Jellied Cranberry Sauce
4 cups fresh Cranberries (1 pound)
1 1/4 cup sugar
1 1/4 cup water
In a medium saucepan combine sugar and water, bringing it to a boil over medium heat. Add the cranberries and return the mixture to a full rolling boil.
Reduce heat and continue to boil for 10 minutes.
Remove from heat, place a wire mesh strainer over a medium-sized mixing bowl. Using the back of a metal spoon, mash the cranberries, until all of the pulp has been extracted.
Stir the contents of the bowl and then transfer the hot mixture into a serving dish, cool and refrigerate until you’re ready to serve.

While this method recommends the use of ice water, cold water is safe enough to use. The water used for this fast defrost method will still be warmer than the frozen turkey’s temperature, but not warm enough to damage the meat or cause it to be at an unsafe temperature.
Never thaw a frozen turkey in warm or room temperature water. Doing so allows bacteria to reproduce rapidly, posing a dangerous health hazard.
How long does it take to Thaw a Turkey in Water?
When defrosting in this way, it takes approximately thirty minutes per pound to thaw. For example, a twelve-pound turkey will thaw safely in about six hours. Take into consideration that a bulkier turkey will undoubtedly take longer to defrost, and a smaller turkey less time.This whole thawing method would also work well to defrost parts of a turkey, such as a full turkey breast, that some local supermarkets sell for the holidays to cater to smaller family gatherings.
Where to Thaw a Frozen Turkey
The kitchen sink might be the most accessible way to thaw a turkey quickly because everyone has a kitchen sink, and considering the need to change the water out when it gets too warm, it makes a lot of sense to try there.

Every thirty minutes, remove the drain stopper to allow the water to drain, secure the stopper back in place, then refill the sink with the correct water temperature to continue the thawing process.

However, once the defrosting process is over, the entire sink and surrounding areas in the kitchen will need disinfecting. If you are prepared for this extra level of cleaning, this might be the best situation.
It is arguably the most practical, as long as you recognize the sink will not be available for use while thawing and are comfortable with the extra amount of cleaning. Some experts would claim the food safety fears would outweigh the practicality, but as it is your kitchen, the decision is yours.
Thawing Turkey in a Bucket, Cooler, or other Container
If you are using another vessel such as a bucket, you can place that bucket anywhere; even outside and out of the way of pets and youngsters in the house.However, this requires a certain level of planning, like considering the ambient temperature of the bucket’s location and getting a covering for the bucket to keep unwanted critters away from the star of the meal.
Thawing Turkey in Brine
One of the tastiest ways to prepare a turkey for cooking is to use a brine. A brine is essentially a liquid that permeates flavorings into the turkey by being submerged for some time, making it juicy and delicious in the final product. Brining a turkey not only ensures good flavor but helps to keep the meat of the turkey juicy and prevents it from drying in the oven when cooking.
To use brine as a step in the water bath method, in the last hour or two of thawing, unwrap the turkey from its packaging, change the plain ice water for a brine that includes flavorings that you enjoy in a turkey. Allow the turkey to soak in the brine solution as thawing completes.As long as the brine retains the necessary temperature of forty degrees Fahrenheit, it will be a safe sneak of extra flavor.

Turkey Brine Flavoring Ideas:
The addition of one or more of the following items would ultimately add delicious flavor to the meat while simultaneously accomplishing the goal of a defrost.
- apple or orange juice
- a salty liquid like soy sauce
- fresh apples or oranges
- aromatic vegetables
- herbs
Be sure to discard the items once the brining is complete as they are no longer safe to consume. The turkey is sitting in a water bath anyway for quick defrosting, so why not add some spectacular flavor to it without much extra work.
How Thawing Impacts Cooking
Some cooking methods, specifically deep-frying a turkey, require the meat to be completely thawed before cooking. If that is the cooking method of choice, be extra careful that the bird has thawed throughout, or you will have a potentially hazardous situation on your hands.

If oven roasting the turkey is the cooking method of choice, the meat can be a bit under-thawed when put into the oven. Still, the cooking times or the oven temperatures would need to be adjusted to appropriately cook the turkey.
The water bath method is the safest way to quickly thaw a turkey because it is a gradual process in a controlled situation. Parts of the meat would not be getting too warm before they need to be, allowing for an even thawing of the bird for optimal cooking.It is undoubtedly better than the unsafe alternative, where according to the USDA, “a package of frozen meat or poultry left thawing on the counter for more than two hours is not [doing so] at a safe temperature.”
More Rapid Defrosting Methods for Frozen Turkey
You may be contemplating thawing your turkey using other methods. A turkey can also be safely defrosted using the microwave.
According to the USDA, it is safe to thaw a turkey in the microwave. Figure 6-minutes per pound using the defrost function. Be sure to use a dish large enough to contain the juice as the turkey thaws. To ensure even thawing, the turkey should be rotated and periodically flipped during the defrost cycle.Generally speaking, this is not the method we’d personally recommend, as some areas tend to start cooking prematurely and cause drying of the bird. Some folks swear by this method though. If you opt to thaw the turkey in the microwave, place the unwrapped frozen bird in a microwave casserole dish (with sides).
Use the defrost function to thaw the bird, which takes an average of 6-minutes per pound. That’s about an hour and fifteen minutes for a 12-pound turkey. Keep in mind that this is not a hands-off method, you’ll need to frequently flip the bird over to ensure even defrosting.

Easy Peasy Peanutty Cranberry Bars! Fresh cranberries and peanut butter chips combine to create a fruity layer of deliciousness! If you’re not a fan of peanut butter, use chocolate chips or white chocolate chips. I LOVE these with white chocolate chips and a handful of chopped macadamia nuts.
Peanutty Cranberry Bars
1/2 cup butter or margarine (1 stick) , softened
1/2 cup granulated sugar
1/4 cup light brown sugar packed
1 cup all-purpose flour
1 cup quick-cooking rolled oats
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup Peanut Butter Chips
1-1/2 cups fresh or frozen whole cranberries
2/3 cup light corn syrup
1/2 cup water
1 teaspoon vanilla extract1. Heat oven to 350°F. Grease 8-inch square baking pan.
2. Beat butter, granulated sugar and brown sugar in medium bowl until fluffy. Stir together flour, oats, baking soda and salt; gradually add to butter mixture, mixing until mixture is consistency of coarse crumbs. Stir in peanut butter chips.
3. Reserve 1-1/2 cups mixture for crumb topping. Firmly press remaining mixture evenly into prepared pan. Bake 15 minutes or until set. Meanwhile, in medium saucepan, combine cranberries, corn syrup and water. Cook over medium heat, stirring occasionally, until mixture boils. Reduce heat; simmer 15 minutes, stirring occasionally. Remove from heat. Stir in vanilla. Spread evenly over baked layer. Sprinkle reserved 1-1/2 cups crumbs evenly over top.
4. Return to oven. Bake 15 to 20 minutes or until set. Cool completely in pan on wire rack. Cut into bars. Makes 16 bars.

I didn’t expect it from this unassuming, summery dip that at first glance I confused with chunky salsa or pico de gallo, but one bite and I knew that I was hooked for life.
The saltiness of the chips combined with the freshness of the tomatoes, the crispness of the pepper, the subtle heat of the jalapeno, the faint hint of lime and garlic…. It was heaven.
A replication of the highest order was necessary, and since that first fateful bite last year, I have perfected my own recipe for cowboy caviar and I am so excited to share it with you today.

I made this cowboy caviar for my family last weekend for Easter, and after baking both my signature carrot cake and coffee cake for brunch, I wanted something a little less sweet, and definitely something that wouldn’t require turning on the oven.
This cowboy caviar is easy to make, just a matter of chopping your veggies and tossing everything together.
If you ask me, the trick to the best possible cowboy caviar is to dice the ingredients that need dicing (the tomatoes, onion, pepper, etc — not the beans!) very small, the smaller the better. Try to keep your tomato and avocado pieces petite rather than big and chunky (about bean-sized works great!). An easy way to do this is with my favorite chopper, including for the tomatoes!
To easily cut my avocado, I like to slice it in half and then score it into small pieces using my knife, then just scoop everything out into the bowl with a large spoon!

This week, I’ll be sharing a new Christmas Mason Jar dessert everyday (4 in total). These gifts are so fun to make and even better to receive! It’s so helpful to have a dessert pretty much ready to go during the busy holiday season. And the end result of these mason jar treats are some of the best desserts ever! 🙂

INGREDIENTS
- ▢1 and 3/4 cups all-purpose white flour
- ▢3/4 teaspoon baking soda
- ▢3/4 teaspoon salt
- ▢3/4 cup light brown sugar, packed
- ▢1/2 cup white sugar
- ▢1/2 cup holiday M&Ms
- ▢3/4 cups milk chocolate chips
ADD IN LATER
- ▢3/4 cup (1 and 1/2 sticks) unsalted butter, softened
- ▢1 large egg
- ▢1/2 tablespoon vanilla extract
INSTRUCTIONS
- IN THE MASON JAR: combine the flour, baking soda and salt in the bottom of a 1-quart mason jar. Tap the jar several times firmly to get the flour mixture in one layer. Press it down as much as possible. Next, add in the brown sugar and pack down as much as possible. Next, add in the white sugar and again pack that down. Add in the M&Ms and chocolate chips. Press down firmly. Seal the mason jar, add a ribbon with a miniature whisk (if desired), and attach the free printable recipe attachment (or the following directions)
- RECIPE TO ATTACH: Preheat oven to 350 degrees F. Beat butter, egg and vanilla extract in large mixing bowl until blended. Add mason jar mix and mix well. Drop by rounded tablespoon onto parchment lined baking sheets. Bake for 9 to 11 minutes or until lightly golden brown. Cool on the baking sheets for 2 minutes before removing to a cooling rack.
