    Hillbilly CAST IRON Cooking

    AVOCADO TACO BOATS

    INGREDIENTS
    1 lb. Lean Ground Beef (or ground turkey or chicken)
    2 Large Avocados
    4 Grape Tomatoes
    4 Jalapeno Rings
    1/4 Cup of Sour Cream
    1/4 Cup of Salsa
    3/4 Cup Sharp Cheddar Cheese - Shredded
    3 Large Romaine Leaves - Shredded

    ***To season the meat I used Cumin, Chili Powder, Onion Salt, Garlic Powder, Celery Salt, and Pepper. You can use a taco seasoning packet but it ups the carb count quite a bit)

    DIRECTIONS
    Cook the ground beef with all of your seasonings over medium-high heat until the meat is cooked all the way - Drain excess grease from the pan

    Cut the avocados in half and use a spoon to scoop out the avocado. If you slide a large spoon a long the edges, you should be able to get it out in one piece

    In the empty avocado shells, add 1/4 of the shredded lettuce into the bottom of each shell

    Next, add 1/4 of the ground beef into each shell

    Top each one with cheese, salsa, sour cream, tomato, jalapeno and avocado.

    Hillbilly CAST IRON Cooking

    Bacon & Onion Foil Packet Potatoes

    2 to 3 sheets of heavy-duty foil
    1 packet onion soup powder
    10-12 baby red potatoes, thinly sliced
    12 slices of cooked and crumbled bacon
    1 small onion thinly sliced and diced
    1 cup cheese (optional)
    Salt and pepper to taste
    3 tablespoons butter
    Sour cream for serving (optional)

    Spray each sheet of foil with cooking spray. Top each piece with equal portions of potatoes, bacon, 1 packet onion soup powder and mix. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely.

    Grill for 20 to 30 minutes. Or you can bake it in the oven, at 350° for about 35 minutes or till done. Let stand 10 minutes before serving. Serve in foil, topped with sour cream if desired.

    Hillbilly CAST IRON Cooking

    DUTCH FUNNEL CAKES

    3 eggs
    2 cups milk
    1/4 cup sugar
    3 1/2 cups flour
    1/2 tsp salt
    2 tsp baking powder

    Preheat oil in a cast iron skillet on medium high heat (for an electric frying pan preheat to 375 degrees). Leave room between the oil and the top of the pan to allow room for batter to be added. Beat eggs, add milk and sugar. Beat well. In a separate bowl, sift flour, salt and baking powder. Add to egg and milk mixture. Beat until batter is smooth. Batter should be thin enough to flow through the opening of your funnel. If needed, add a little more milk.

    Put your finger over the bottom of the funnel and pour batter in top. Drizzle batter in hot oil making criss crosses and swirls. (I use a measuring cup with a thin spout to do this, easier for those of us less coordinated!). Let brown on bottom and then carefully flip it over with tongs to brown on the other side.

    Place on a paper towel to drain for a minute or so and then serve warm with molasses, jelly or sprinkle with powdered sugar

    Fried Dill Pickles

    Ingredients:

    Peanut oil, for frying
    1 cup milk
    1 egg
    Pinch cayenne
    Splash pickle juice
    1 cup cornmeal
    1 cup all-purpose flour
    1/2 teaspoon smoked paprika
    1 teaspoon salt, plus more for seasoning
    1/2 teaspoon freshly ground black pepper
    2 teaspoons finely chopped dill
    1 jar whole dill pickles, sliced into spears

    Directions:

    Preheat your deep-fryer to 375 degrees F.

    Into an 8 by 8-inch casserole dish, beat together milk, egg, cayenne, and a splash of the pickle juice.

    Combine the cornmeal, flour, paprika, salt, pepper, and dill into another baking dish.

    Thoroughly dry the pickles with paper towels. Dredge first through the wet, then the dry ingredients. Gently place pickles into the deep-fryer in batches and fry until golden brown, about 1 1/2 to 2 minutes. Remove to a paper towel lined sheet tray and immediately season with salt.

    Fried Pickles Recipe!

    Ingredients

    Dill Pickle Chips
    3/4 to 1 cup of beer
    2 eggs
    1 -2 cups of flour
    Cholesterol free oil

    Directions

    Pour oil in a large skillet until the oil is about 1-2 inches up the side of the pan. Heat oil to 350 degrees.

    Strain pickles in a small colander.

    In a mixing bowl, whisk the yolks and 3/4 cup of the beer. Season the mixture with salt and pepper. Whisk in enough flour to form a batter. If the batter is too thick add the remaining beer to thin the batter.

    Dip pickles one at a time using tongs into the batter and then place in the heated oil.

    Fry pickles for about 2 minutes flipping the pickle after about 1 minute.

    Place pickles on a plate lined with paper towel and then season with salt. Serve with Ranch Dressing.

    Hillbilly CAST IRON Cooking

    Barbecued Brisket of Beef

    1 c White wine
    3 c Apple cider
    1/4 c Honey
    2 tb Dijon mustard
    1/4 c Soy sauce
    2 tb Brown sugar, packed
    1 tb Minced garlic
    1 tb Minced fresh ginger root
    1 tb Whole coriander
    2 Sprigs fresh thyme
    1 Brisket of beef (2-1/2 lb)

    Combine wine, cider, honey, mustard, soy sauce, brown sugar, garlic, ginger root, coriander and thyme in Dutch oven or heavy roasting pan. Add brisket. Cover tightly and place in oven. Turn oven to 350F and cook 1 hour. Remove brisket from cooking liquid, cover and set aside. Transfer liquid to medium pan and cook over medium heat until reduced to a glaze and thick enough to coat back of spoon. Using covered grill, light about 12 charcoal briquettes and add small piece of mesquite or other wood. Be sure to place charcoal and wood to one side of grill. Arrange brisket on grill so that it is not directly over burning wood. Paint it with some glaze. Place cover on grill and smoke brisket 1 hour, turning meat and coating with glaze every 15 minutes. Add charcoal or wood, small piece at a time, if fire seems to get too cold. Remove from grill, thinly slice meat against grain and serve. Offer any remaining glaze on side.
