Bacon Ranch Foil Packet Potatoes

3 sheets of heavy-duty foil
10-12 baby red potatoes, thinly sliced
6 slices of cooked and crumbled bacon
1 packet ranch dressing mix
Salt and pepper to taste
3 tablespoons butter
Sour cream for serving, if desired

1. Spray each sheet of foil with cooking spray. Top each piece with equal portions of potatoes, bacon, and ranch dressing mix. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely.

2. Grill for 20 to 30 minutes. Let stand 10 minutes before serving. Serve in foil, topped with sour cream if desired.

All-in-One English Breakfast Bake

8 Servings

1 1/2 pounds English bangers, or substitute your favorite link style uncooked sausages (Bratwurst sausages are the most similar to English Bangers that I’ve found in the US)
1 pound medium potatoes, scrubbed and cut lengthwise into eighths
2 teaspoons vegetable oil
Seasoning salt, your favorite kind such as Lawry’s, Schilling Salt & Spice, etc.
1/2 pound large fresh mushrooms, stems removed
3/4 pound Roma tomatoes, cored and cut in half

8 eggs
2 14 oz. cans pork and beans
Preheat the oven to 400°.

If the bangers are the larger 1" diameter sausages, cut them in half; if they are smaller, leave as they are. Place the sausages in a large shallow casserole dish.

Place the potato wedges in a bowl and pour the vegetable oil over them.

With your hands, coat each of the wedges with the oil and arrange them around the sausages; sprinkle them with the seasoning salt.

Bake the sausages and potatoes in the preheated oven for 25 minutes.

Remove the dish from the oven and arrange the mushrooms and tomatoes in between the sausages and potatoes; sprinkle the mushrooms and tomatoes with seasoning salt.

Return the dish to the oven and bake an additional 20-30 minutes or until the potatoes are crisp and the tomatoes and mushrooms are cooked through.

Make six indentations in the casserole dish and break an egg into each one.

Bake for an additional 5-10 minutes or until the eggs are set. Serve immediately.

Just before the eggs are done, heat the pork and beans separately either in the microwave or on the stovetop.

To serve: spoon some of the beans on serving plates, and surround them with the eggs, bangers, mushrooms, tomatoes, and chips.

Serve with toast or English muffins on the side if desired.

Preparation

1. Preheat oven to 350ºF. Slice off top of each dinner roll and gently remove some bread until there is a hole large enough to accommodate an egg. Arrange rolls on a rimmed baking sheet. Reserve tops.

2. Crack an egg into each roll, then top with some herbs and a bit of cream. Season with salt and pepper. Sprinkle with Parmesan.

3. Bake until eggs are set and bread is toasted, 20 to 25 minutes. After eggs have cooked for 20 minutes, place bread tops on baking sheet and bake until golden brown. Let sit 5 minutes. Place tops on rolls and serve warm.

How to Pack a Camp Kitchen

Camping season is right around the corner! In my anticipation of our next trip I’ve been organizing my gear and inventorying my supplies. I find that knowing exactly what I have and what I need makes preparing for an adventure that much easier and more enjoyable. The gear that’s needed for backpacking is very different than what you’ll take car camping but there are some multipurpose items that cross over. Because I love both types of adventures almost equally, I want to share what I pack in my camping kitchen for both situations!

BASICS FOR BACKPACKING

When off in the wilderness with nothing but the contents of your backpack, every item counts. It’s important to consider the weight, necessity and usefulness of every object you plan to carry and make good use of each, or suffer the pain of a heavy pack filled with junk that won’t be used. Thus the backpacking kitchen is usually simpler than its car camping counterpart, but that doesn’t have to mean it’s any less delicious! Here’s what I usually pack:

1. WATER It’s very important to carry 1 gallon of water per person per day to stay fully hydrated. If I’m in an area that I’m confident has a good, clean spring water source, I’ll pack more than enough water to get to the water source plus chlorine tablets to purify the new water. I recently discovered lightweight, collapsable water bottles that fold flat when empty and hold up to a gallon of water which are perfect for backpacking. Additionally, I keep a three-litre Camelback in my back to keep me watered on the go.

2. FOOD The best part! When backpacking it’s important to pack 3 solid meals per day plus snacks to fuel you on the trail. There’s a range of pre-packaged, freeze-dried and lightweight meals available for backpackers but they can get pretty expensive and time consuming to prepare for every meal. I like to pack a freeze-dried entree for each dinner, eat fruit, granola and coffee for breakfast, then have cheese, crackers, cured meats, trail mix and granola for lunch and snacks.

3. THINGS TO DRINK There’s nothing like waking up to a hot bowl of instant black coffee or green tea after a night under the stars, or warming up with super hot tea before settling into the sack. I like to pack the Starbucks Via single instant coffees and individually wrapped teas from Tazo. Emergen-C is also a pack staple because it’s packed with vitamins and minerals that help the body recover after a long day. Beer and wine are too heavy and bulky to carry backpacking. So I pack a flask of my current favorite whiskey or bourbon and call it a day. Jameson or Bulleit but sometimes Makers Mark. You know, for medical purposes.

BEAR BAGS & ROPE Bears and raccoons and mountain lions and other nocturnal beasts have sensitive senses of smell and may come creeping for food scraps that are left around a camping area. Bear Bags are made of sealable plastic that blocks odors and prevents scent transmission. All food and scented items should be packed in bear bags and stored a minimum of 50 yards from the campsite, high up in a tree if possible. Rope is a necessary item for all camp kitchens, to hang the bear bags, to hang clothes, to use in emergencies. I carry at least 100 feet of nylon rope – not cotton, it degrades quickly and is not as strong – with me on all trips.

5. BANDANA AND OR TOWEL Keep a bandana on hand to use as a handkerchief and to wipe away sweat. It’s also great for a napkin and can be used to dry dishes. Adding a pack towel can be handy on longer trips for cleaning oneself and one’s dishes.

6. LIGHT While backpacking I pack a small battery powered Black Diamond lantern for light while cooking and eating. It’s very important to check and charge the batteries before a trip and have a backup light source in case the batteries die. I also cary a Petzl headlamp for task-oriented light. Each camper should carry their own light and be able to access it at all times. I sometimes also pack a third light source such as a small LED flashlight or candle lantern for extra or emergency light.

7. BOWLS & UTENSILS I prefer to use my titanium spork for all camping adventures. It’s lightweight and you can eat anything with it! As far as tableware, reusable is better than disposable and bowls are better than plates because they hold everything well, and warm your hands in the process. Keep it simple with one bowl per person: eat dishes as they are cooked and rinse the bowl for dessert or tea after dinner.

8. POTS I got an excellent set of titanium cookware for christmas that I’ve been dying to use! But before these excellent tools I used a combination of simple nesting aluminum pots and bowls: 2 pots and 1 bowl for each camper. It’s essential to carry a potholder if your pots don’t have external, heat-proof handles. Camping pot holders are aluminum-handle-gadgets that work like the handles of a pliers but fit securely on your pots and allow you to pick up and pour the hot pots without risk of being burned.

9. FIRST AID KIT Necessary for all camping, I like to keep my kit with the kitchen gear because it ensures it will always be packed. My first aid kit is simple and made up of my favorite items drawn from other kits. I build my own so I know exactly what’s in it and because a store-bought kit never contains everything you need. But that’s another post altogether!

http://www.libertyandlunch.com/wp-co...mpkitchen1.jpg 10. CLEANING SUPPLIES A tiny container of Dr. Bronner’s Soap is all that’s needed to wash hands, faces and dishes. It’s organic, naturally derived, biodegradable and okay to use in small quantities. I also pack wet-naps, sandwich bags and an extra trash bag. Pack in-pack out!

11. FIRE MAKING MATERIALS This is my favorite part of packing! I love making safe fires and being able to choose the best tool to light said fire. So I carry a weatherproof and waterproof torch lighter that I’ve filled with butane and tested before the trip. I also pack waterproof container with weatherproof matches. And for fun and a backup-backup I pack a Flint and Steel, with which I can make sparks to start a fire manually. Choose your fire making materials carefully. Consider all types of weather you may encounter in your journeys, the possibility of wet matches and leaking fuel, and know that the ability to make a fire for warmth and signaling can save your life in a pickle.

12. KNIVES Every camper should carry their own knife for eating but also to use around camp or in an emergency. Knives should be sharp, easily accessible, and the camper should be familiar with the safety features and operation of their tool of choice. I carry a Leatherman with me and also pack an Opinel carbon folding knife in my kitchen kit for easy access during meal prep.

13. SEASONINGS & SPICES When backpacking I keep it super simple and pack an old aluminum film canister with a 2:1 mix of ground pepper and kosher salt.

14. STOVE & FUEL I carry a small single-burner stove. It is efficient, lightweight, and even though it only cooks one pot at a time it’s all that’s really needed in the bush. Pack enough for the estimated amount of cooking time for the duration of the trip plus 25-50% more just in case there’s heavy wind, wet or cold conditions, or emergencies that would require increased cooking times. Make sure the fuel type is compatible with the stove type. I use isopro because it’s clean, compact, and works with my stove. Also pack the wind guard that comes with the stove. Get to know your stove and fuel, and test them, before going on a multi-day backpacking extravaganza.

CAR CAMPING COMMODITIES
Let me say now that not all car camping is created equal. My style, which I inherited from my camping-crazy parents, is definitely that of a purist – just because there is a car involved does not mean I feel free to pack glassware, tablecloths, plates, silver, or any other excessive “supplies”. In car camping the car functions simply as a tool to enable an experience, not as a huge container waiting to be stuffed with all the conveniences of the home kitchen. Car camping can be harder to pack for than backpacking simply because you have the ability to carry more. Don’t Take only what you’ll need and you’ll be happier with what you have. A good guide is to keep it to one egg crate of supplies and one small cooler, but if you insist, you could also bring a picnic basket. Here’s how I pack my car camping kitchen:

STOVE A Coleman two burner stove is the perfect stove for car camping. Efficient and powerful, it helps make breakfast and dinner a snap. When available I take advantage of the grills present in most established camp grounds to grill up sausages and veggies.

COOLER When you’re camping with the car it’s easier to bring a few foods that need refrigeration. What exactly I pack depends on the meals I plan to make but I’ll usually bring cheese, yogurt for breakfast, butter, beer and vegetables. Don’t forget ice to keep everything cold, and pack leak-able containers in bags so they don’t muck up the cooler if they fall over.

FOOD, SEASONINGS & SPICES When car camping I prepare the cooked meals ahead of time. My favorite thing to eat is chicken sausage and marinated vegetable kabobs! Preparing and seasoning everything at home before the trip ensures a quicker prep time at camp and fewer things to pack. But when I’m feeling very adventurous I’ll cut and prep the meal at camp, which usually requires the addition of a bowl, cutting board, olive oil, and a few choice spices. I’d pack dried garlic, smoked paprika, and fresh rosemary to name a few.

LANTERN The best lanterns are gas-burning Coleman double-mantle lanterns. Bright or dim, the classic lantern choice. I need to get myself one stat.

Other great stuff you could use while car camping without going overboard include, simply, plates and mugs, napkins and card games. The car is not just a bigger backpack or an extension of all the conveniences of a home kitchen. Camping is about being in nature, keep it simple!

Having an organized camp kitchen is essential to having a good camp cooking experience. Consider: by the time camp is reached it’s likely dark, possibly very cold, and it’s probable that everyone in the party is hungry and exhausted. The cook has the challenge – and the skill – to make even the roughest evening in camp a delicious, warming, conversation-filled end to the day!

This is by no means an exhaustive list of everything to pack for a camping trip but it should cover the kitchen. I want to write more about the rest of the ingredients in a well-planned pack. Let’s go camping soon!

Prep/Total Time: 30 min. Yield: 10 Servings

1 pound sliced bacon, diced
1 medium onion, chopped
32 ounces frozen shredded hash brown potatoes, thawed
10 eggs
Salt and pepper to taste
2 cups (8 ounces) shredded cheddar cheese, optional
Chopped fresh parsley
Directions
In a large skillet, cook bacon and onion until bacon is crisp. Drain all but 1/2 cup of the drippings. Add hash browns to skillet; mix well.
Cook over medium heat for 10 minutes, turning when browned. Make 10 "wells" evenly spaced in hash browns. Place one egg in each well. Sprinkle with salt and pepper. Sprinkle with cheese if desired.
Cover and cook over low heat for about 10 minutes or until eggs are set. Garnish with parsley; serve immediately. Yield: 10 servings.

BASIC FONDANT

Ingredients

2c granulated sugar

⅛t cream of tartar

1½c boiling water

1½qt saucepan

Directions

1. Butter the sides of the saucepan.

2. Mix all ingredients. Stir over med heat until sugar dissolves and mixture comes to a boil. Cook without stirring to soft ball stage ( 238 ).

3. Pour onto platter or shiny cookie sheet with sides. DO NOT SCRAP SAUCEPAN. Cool mix until only slightly warm (30 min).

4. With a spatula or wooden spoon, scrape fondant mix from the edge of platter toward the center. Gradually the fondant mixture will turn stiff and white. Knead until free of lumps. Wrap and place in covered container.

5. Allow to ripen 24-48 hours. Ready to use for mints or cake decoration.

When Society Disintegrates: A Preview Of What May Be Coming To Your City

Yesterday I read about hundreds of armed vigilantes in a small Mexico town . This was preceded earlier by reports of townspeople capturing and murdering several men, displaying their bodies propped up in lawn chairs for the world to see. Their captors had written signs on some of the dead men as a warning to those who came to loot and kill. On the surface, with so much violence associated with the drug wars in Mexico, this seemed like a positive development purely from the aspect of people taking justice back into their own hands. Their corrupt officials not caring to protect them anymore were ignored and the town was saying “we aren’t going to take it anymore”.

Now, however things appear to be evolving and so are my thoughts on this subject. The “Vigilantes” are setting up road blocks, arresting police officers, conducting searches of homes for weapons and increasing their presence everywhere. I fear that the vigilantes could wind up being just as dangerous to the citizens of that town as the gangs and corrupt police. I also wonder if that type of scenario isn’t what we have in store for us here.

An article in the Global Post states the simple motivation for the vigilantes:

“The federal and state governments haven’t been able to do anything,” said Evert Castro, an Ayutla municipal councilman. “And we don’t have the capacity to fight these criminals. So the people got tired and decided to act on their own. We see this as a good thing.”

We are supposed to be a society of laws. For this to work people have to obey the laws and those who don’t are supposed to be dealt with fairly and in a just manner. When this happens, you have an equilibrium that is maintained and for the most part people live together in a civilized manner.

When you take the laws, justice and fairness away as we have seen for years in Mexico and one could argue that this is happening here to a different level as well, society becomes unbalanced. Injustice rules and people can be taken advantage of.

What if the rule of law no longer applied to your community? This is something we discuss in prepper circles daily, but usually in theory. Hypothetical scenarios that we use to either bolster our argument or use as rationale to make decisions. WROL (Without Rule of Law) is nothing that any of us should want to live through. I know that some may say (as I initially did) “Great! These people will clean up their own streets.” Really?

What is the difference between police searching through your house without cause or warrant and a gang of vigilantes? What makes getting stopped on the side of the road by a gang of armed vigilantes and having your car searched any better than going through some random checkpoint setup by the government? Are they really better off now in Mexico?

They also manned checkpoints and claimed they had arrested at least 30 suspected criminals. One of the masked vigilantes said: ‘They kill, extort, rape. You do know if they are drugs dealers, thugs, who want to grab everything. ‘We want to return peace and tranquility to the entire population. Only the people can restore order.

If society devolves to the point where “only the people can restore order” do you trust that all of the other “people” will be fairer, less prone to corruption than anyone else? I am not for one second stating that only government or the police can protect you. What I am saying is that the people who are entrusted by our society to ensure justice must be just themselves. If the gang of people who are trying to protect your town are no better than the ones they ran off, killed or arrested, where does that put you? What can you do now to put yourself on a level footing in your neighborhood or community?

Know your neighbors

This is a simple one. Knowing your neighbors and how they will react, what their thoughts and philosophies are will help you deal with them if a situation arises where some form of resistance or vigilantism is planned. You want the people around you to know you, be able to vouch for your character and hopefully protect you from any lawlessness that is caused. If you are part of the team responsible for “restoring order” you will have a supreme advantage if you know the people you are working with and supposedly protecting. It should also go without saying that you have a supreme responsibility also to your fellow man.

Practice OPSEC

As much as possible, you want to be prudent in what you say, how you say it and to whom you say it to. OPSEC is keeping essential information about you or your family as quiet as possible. You don’t want to brag about supplies, preps you have or someone could easily say: “Hey, Joe has a whole bunch of ammo. We could take it from him.” This is just one example, but could carry over into a lot of other aspects of survival.

Ensure you have the right stuff

When and if chaos ensues, the last thing you want is to be without the essentials. You need a decent store of food. You need water and I would recommend a means of defending yourself. I am not trying to be an alarmist, but I do believe the writing is on the wall for our society and I am preparing. You should evaluate your life, your situation and make sure you have plans to take care of your family if it all goes sideways. Make sure you have this taken care of now and you are not trying to make it to the sporting goods store after the riots have started.

Prepare to Get Out of Dodge if necessary

It may be wise for you to leave. If we are back to a wild west, Mad Max type of world, you may want to get out of town. Prepare yourself now by clearly thinking and analyzing your decision to bug out or bug in. Knowing what you want to do, preparing for that eventuality is a start, but situations are dynamic. Think through your options well in advance of needing to employ them. If you have to get out of dodge, make sure you have a plan, a great vehicle and options. If you intend to hunker down, make sure you know your neighborhood or town. Intelligence like this could help you make decisions on the fly.

Never let your principles be compromised

I was going to say “Above all else” before never let your morals be compromised. It is easy to say what you would “never” do when you are sitting in front of a computer. I can easily say I would never do anything bad to another unless my life or my family’s lives depended on it, but that isn’t completely honest. We are all human and are subject to weakness for a million reasons. What I try to do is live like I should and act as God leads me. I know I will make mistakes, but I try to think about situations I may be faced with. Imagining how you will act is no substitute for the real moment, but it does give your brain some practice thinking through the ramifications of your actions. Even developing a personal threat escalation plan, while just an exercise, can be beneficial. State out loud what you will or will not abide as your conscience leads you. Try to maintain that moral compass as straight as possible. You may fall, but having a direction in the first place will point you back to the right path much quicker.

I fear for our civilization but I will not sit idly by and watch it crumble and consume us. I will make plans, prepare my family as best as I can and try to be a force for good. Besides praying, I don’t think any of us can do much more than that.

America’s Death Zones: Where NOT To Be When It Hits the Fan

As the potential for a globally destabilizing event becomes ever more probable, many concerned Americans are starting to wonder where they’d go if the worst were to happen.

To help answer that question, we can start by identifying the areas of the country to avoid.

The following map of the United States takes into account all of the gun related deaths since the Sandy Hook school shooting. You’ll likely notice that there is one common denominator. The majority of the violence has occurred in major metropolitan areas, with some incidents spreading into outlying ex-urban and rural areas. As of this writing2,244 people have been killed since December of 2012.

If this is the state of our nation during relative peacetime and perceived prosperity, imagine what it’ll look like in the midst of financial, economic or political turmoil.

Americans living east of the Mississippi River will likely experience the brunt of it. But anyone residing in and around any major U.S. city will, likewise, have a tough road ahead of them.

If you live in one of these red zones, you’d better plan accordingly:

As you may have guessed, the overwhelming factor in determining your chances of survival during a wide-scale regional or national emergency will be population density, a topic that has been extensively covered by Strategic Relocation specialist Joel Skousen:

…every crisis that threatens, even a local crisis, can turn exponential because of close proximity to people who cannot help themselves. Even good people panic in a crisis…

Wherever we find large groups of people, when crisis strikes we will also find the worst that mankind has to offer – rioting, looting, starvation and violence.

Survival expert James Rawles refers to them as the golden horde; the thousands of people who will be desperate for supplies, shelter and safety in the aftermath of a major catastrophe:

…there is just a thin veneer of civilization on our society. What is underneath is not pretty, and it does take much to peel away that veneer. You take your average urbanite or suburbanite and get him excessively cold, wet, tired, hungry and/or thirsty and take away his television, beer, drugs, and other pacifiers, and you will soon seen the savage within. It is like peeling the skin of an onion—remove a couple of layers and it gets very smelly. (Survival Blog)

Given the probability of the United States succumbing to any number of devastating catastrophes that may include an economic collapse, food shortages,pandemic, regional earthquakes, solar storms, or war, there is ample motivation for those with the means to do so to get out of densely populated areas of the country. Likewise, living in locales with close proximity to major thoroughfares such as interstate highway systems could pose a danger as the ‘horde’ evacuates disaster-struck areas.

For many, relocation is not possible because of job requirements or other factors. Thus, those of us who are left with no choice but to remain in populated urban or sub-urban areas, it is strongly recommended that you consider preparedness planning for staying put, or bugging in, during an emergency. It’s not the ideal scenario, but if you plan on hunkering down then you may find it advantageous to have food stores and other long-term supplies, as well as home defense plans. And, should things get so bad that you have to leave your primary residence, be sure to have evacuation plans in place.

The U.S. government is actively preparing to deal with the aftermath of many of the possible crises cited above, namely the civil unrest that will follow. Police and military units are training to deal specifically with urban scenarios because emergency services planners understand that America’s metropolitan death zones will be completely devoid of law & order.

If you’re in one of these areas, and plan on staying during a major crisis, take steps now to prepare for the inevitability of mass chaos.

Ice Candles

Things you’ll need:
Cardboard milk carton
Candle wicks
Candle Wax
Ice
Double boiler

Things to do:
1. Start your wax melting over low heat.
2. Trim off the top of the milk carton so you have an open box.
3. Dip the bottom of the wick into the wax and affix it to the bottom of the carton in the very center.
4. Fill the container ¾ of the way full with ice, keeping the wick in the center of the mold.
5. Pour melted wax directly over the ice until it’s just covered. Allow it to cool until hardened.
6. Tear the cardboard away from the candle once the wax is hard and then set the candle in the sink or a bowl until the water pockets have drained away.

I do not have instructions, I posted this because I wanted to share a great idea for you to use your own imagination.

Materials:
•Candle Wax (I’m going to recycle some boring white candles from the house)
•Clean milk or juice carton (Your need something with a nice square bottom)
•Melting pot/can
•Candle Thermometer (Perhaps you could use a candy thermometer or other kind also)
•Wick or taper candle
•Optional- Wax coloring and scent (You can use dye chips specially for coloring candles, liquid dye added with an eye-dropper, or even crayons! For scents, avoid essential oils since most are not designed for the high-heat of candles. Many craft stores can assist with what scents are appropriate and scented lamp ring oils are generally the inexpensive route.)

Steps:
1.Clean out your milk or juice carton. I will be chugging the rest of the orange juice from breakfast.

2.Trim the top off the carton to your desired height. I only trimmed about 1/5 off the top.

3.Cut up the wax into small pieces. I’m going to shave it with a grater; this will help it to melt faster.

4.Melt the wax in a suitable pot placed in a larger pot with boiling water. A clean metal can also works well for melting wax. I’m using a large can formerly housing lychees.

5.The wax can ignite if it becomes too hot. Keep a close eye and make sure the wax stays between 170-180 degrees F. Note- Wax fires should be extinguished with baking soda or a fire extinguisher, not water.

6.If you want to color your candle, add the wax coloring or liquid dye now and stir. You can use a potato peeler to add small pieces of wax dye. Remember the color will change as the wax hardens. You can test the color by dripping a few drops onto a white paper plate and letting it harden as it cools after a few minutes.

7.When the wax is melted, you can also add your preferred scent. You add 1/8 oz. of candle scent for every pound of wax. Stir.

8.The easiest way to give your candle a wick is to use a thin, tapered candle in the same color. Protect your hand with a potholder and pour a small amount of wax (about ½ in.) into the bottom of the carton. Set the tapered candle into the center of the bottom and let harden.

9.Break up a cup or more of ice in a plastic bag. The smaller the pieces are, the better the design will look. You can use a meat mallet or a rolling pin.

10.Pour the crushed ice into the carton up to the top.

11.Pour the hot wax over the ice and let stand overnight to harden.

12.In the morning, pour off any water standing on top of the candle and set the carton upside down on a towel or plate to drain any remaining water.

13.Carefully tear off the carton to reveal the ice candle.

All Natural Hair Mask

A great all natural hair mask for all hair types includes just two ingredients - avocado and honey.

Peel and remove the seed from one avocado and mash the avocado in a bowl. Mix in a tablespoon of organic honey and mix thoroughly. Spread the mixture throughout your hair and let it sit for 20 minutes before rinsing it out fully.
