    Best woods for smoking include: 1. Oak. Good wood for new smokers. Medium strong flavor. Good for lamb, beef, brisket, and sausages.
    2. Hickory. Most versatile. Too much smoke will be bitter. The smoke though is sweet, savory and hearty. Good for ribs, pork shoulders, red meat and poultry.
    3. Maple. Subtle smoke. Sweet, light mild. Good for poultry, pork, foul.
    4. Mesquite. Hardy with intense flavor, use modestly. Good for red meat.
    5. Pecan. Rich, sweet, nutty flavor. Good for briskets, roasts, and ribs
    6. Apple. Mild, sweet, mellow. Good for chicken, wild foul, pork.
    7. Alder. Light, sweet, delicate. Good for fish, like salmon, trout.
    8. Cherry. Mild, fruity. Good for chicken, turkey, ham.

    A smokehouse is a small building where meat or fish is cured with smoke. Smoke works to cure and preserve the meat for long term storage without the use of refrigeration. If done correctly, smoked meats can last without spoiling for up to a year or more. In traditional use, smokehouses served as a place to both smoke and preserve meat, but also to store it for long term use. In long term storage, salt and smoke were used in combination to effectively dry and cure the meat by removing all or most of the moisture. This prevents bacteria and molds forming which destroys the meat. Some houses also ward off animals from accessing the meats as smoke makes the environment inhospitable.
    Before modern refrigeration and freezers, salting was a mainstay.
    Various woods can be used for smoking, but all should be wet enough so that they burn cold and inefficiently. These woods will produce incomplete combustion - smoke. Apple wood, cherry, some spruce and alder make great smoking agents and impart nice flavor to meats.
    A smoke house is a simple small box, or house with a vent at the top, not air tight. Wood is placed in a lower box and piped in to the space to encircle the meats. Wood is burned slowly, but persistently over time. Meats can be smoked for hours or days depending on personal reference and types of meats, cultures and desired use.
    Over time, the smoke house will blacken, further protecting the smoke house from pests. "Self-Reliance" is an 1841 essay written by American transcendentalist philosopher and essayist Ralph Waldo Emerson. It contains the most thorough statement of one of Emerson's recurrent themes: the need for each individual to avoid conformity and false consistency, and follow his own instincts and ideas. This channel will approach self reliance from a modern perspective. and will focus on various build projects using modern amenities, and tools to build a completely self reliant lifestyle.

    My friends show up at the tiny cabin in the woods and we do some chores including an upgrade to the wood burning hot water tank, remove some trees from around the tiny house, and pull a dead tree out of the pond to get it ready for the winter and ice skating. We also put a giant chunk of meat in the smoke house.
    As the evening wears on, disaster strikes, and the smoke house goes up in flames.
    I've always wanted to use my construction and creative skills to build a super tiny off grid house or living space. This is what I came up with, a small cube, raised up off the ground on cedar post stilts to both protect from the elements, save on foundational requirements, and provide an epic view of the pond and surrounding forest! The shell of the cube is completely wrapped in kerdi waterpoof membrane made by Schluter, including the flat roof to give The Cube, it's unique look.
    Regular framing forms the structure of The Cube which is bolted to the cedar posts supports. I have used reclaimed materials for nearly all of the construction, from the lumber, to the windows and doors. The aluminum door is cut from a full frame garage door and purposely narrow to permit more wall space for bedding and sitting.
    The upright door is only meant to access the wrap-around porch, while the lower hatch serves for entry and exit. It is also cut small to keep the space useful.
    Inside, The Forest Cube doesn't feel cramped because of the big front window opening up the space to the forest and pond that surround it. The view is amazing! The pond area will grow in with lush vegetation by next spring and the waters be filled with wildlife, fish and frogs, and our pet ducks!In time, the tiny forest cube off grid house will be complete with sleeping quarters, or bunk beds, a sitting area, or food prep area, indoor wood heating, and a wrap-around porch seating area.
    Other features to be added to the space will include indoor lighting supplied by a quiet battery generator and unique decor such as a 'floating ceiling.

    My 823 square feet cabin does not have running water or plumbing. I don't have a kitchen sink or an indoor bathroom. I do have an outhouse.
    When it rains, I will shower under my steel roof. The water can be very cold at times but it feels absolutely invigorating.     We stay busy at the cabin preserving more food for the winter months. We can chicken stock, pickle and ferment vegetables from the garden, make kefir cheese and enjoy fresh caviar! Kohlrabi and Turnip RelishYields 8 pints)- 10 kohlrabi - 4 turnips- 4 red onions- 1 bunch of garlic scapes * can substitute 4 to 6 garlic cloves- herbs and desired quantity of your choice- 4 cups apple cider vinegar- 2 cups sugar- 2 tbs cumin seed- 2 tbs coriander- 2 tbs kosher salt- 2 tbs mustard seed- 1/2 tbs ground black pepper1. Peel and dice kohlrabi and turnips, dice red onions, garlic scapes and herbs, set aside.2. In a large pot bring apple cider vinegar, sugar and spices to a boil, add chopped vegetables and herbs to the brine, return to a boil.3. Simmer mixture for 10 minutes, prepare clean canning jars, lids and bands.4. Ladle hot mixture into jars, leaving 1/4 inch headspace, wipe jar rims prior to placing lids on, secure bands fingertip tight.5.     Jeremy, Scott and I, head to the Garanaska river to tackle up for some fresh running salmon in the fall running up from the Great Lakes. We then returned to the off grid cabin to smoke the fish using a freshly fallen cherry wood branch.     We tie on roe bags to 6lb test leader line, up to a swivel and float. Some split shot sinkers or weights are attached to keep the line down where the fish swim. We are targeting silver king or Chinook salmon that are entering the stream to spawn in the annual fall salmon run.
    We manage to catch a nice big hen full of eggs. The eggs are carefully harvested and saved for our next fishing adventure. These will be tied up in row bags. I clean the salmon on the rocks into two beautiful fillets, enough for Jeremy to take home with him to share with his family. The other large fillet is smoked in the smoke house build by Kevin from Modern Self Reliance.
    We use a recent downed cherry wood branch to smoke the salmon in an enclosed pit below the smokehouse. The smoke then rises from the pit into the smokehouse chamber where the fillet is places on a wire rack for drying and absorbing all the wonderful smoky flavor.

    I embark on another journey with my DIY Trail Cabin, aka "Snowmobile Camper". This time, I will be heating the camper exclusively with solar energy. I use a couple solar panels and lithium battery packs to run a small electric heater and the lighting. My cosy patch of paradise, in an otherwise cold and snowy landscape. While out on the trail, I noticed loads of coywolf (eastern coyote) tracks. Looks like I won't be alone after all...
