    JALAPENO POPPERS

    1 (8 ounce) package cream cheese, softened
    1 (8 ounce) package shredded sharp Cheddar cheese
    1/4 cup mayonnaise
    ...
    15 fresh jalapeno peppers, halved lengthwise and seeded
    2 eggs, beaten
    1/2 tablespoon milk
    1 1/2 cups crushed corn flake cereal
    3 oz package bacon bits (use whole package if double batch)

    DIRECTIONS

    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.

    2. In a medium bowl, mix together cream cheese, sharp Cheddar cheese and mayonnaise. (add bacon bits if desired) Stuff jalapeno halves with the mixture.

    3. Whisk together eggs and milk in a small bowl. Place crushed corn flake cereal in a separate small bowl.

    4. Dip each stuffed jalapeno half into the egg and milk mixture, then dip in corn flake cereal to coat the top.

    5. Arrange in a single layer on the prepared baking sheet. Bake in the preheated oven 30 minutes, or until filling is bubbly and lightly browned.

    *Use rubber gloves when cleaning jalapenos!!

    Super easy, quick and delish dessert or special treat. Ricotta chocolate fritters. yummy

    Ricotta chocolate chip fritters

    ...
    16 ounces ricotta
    1/2 cup chocolate mini morsels
    1/2 cup flour
    1 beaten egg
    1 tsp vanilla
    1 tlb sugar
    and if you like chocolate and orange you can add some Grand Marnier or a tlb spoon of zested orange peel.
    enough peanut, canola or which ever oil you want that can take the heat to be 2 inches deep in a skillet.


    mix together all ingredts. while you heat your oil on medium high, once the oil is hot shape your mix into small balls and gently drop ionto the hot oil. let them brown and if the oil doesn't cover them gently turn to brow the other side. remove from skillet with a slotted spoon and place on paper towles to drain any excess oil, as they cool sprinkle with granulated or powdered sugar.
