    (Natural News) When you’re building a stockpile of emergency food and supplies, meat is one item that should be part of your list. Learn how to preserve meat through salting and curing if you want to save money on groceries.
    Dry salting or using a salt brine are meat preservation methods that you can use even without electricity, so it’s worth learning how to cure meat if you are worried about long-term power outages in your area. (h/t to ModernSurvivalBlog.com)
    Why use salt to preserve meat?

    Salt is used to cure and preserve meat because it inhibits the growth of microorganisms, including those found in meat. Salt preserves meat by drawing out water from the microbial cell by osmosis due to the high concentration of salt outside the cell.
    The cell loses water until it reaches a state where it cannot grow and is unable to survive.
    When stored properly, salt will also last a long time in your stockpile. To save time on moving salt to bigger containers, you can buy salt sold in 10-pound pails.
    You can also buy special salt specifically used to cure meat. While you can use almost any kind of food-grade salt for curing meat, some people recommend kosher salt (a coarse grind).
    Tips for salting and curing meat

    Here are some tips and recipes that you can use to salt and cure meat.
    Salt beef
    Salt beef is also called corned beef and the use of the term “corned” stems from the fact that the Middle English word corn could refer to grains of salt and cereal grains.
    You can salt meat by adding dry salt or using brine.
    Try the recipe below to make salt beef at home.
    Ingredients for 8-10 servings:




    • 300g Soft light brown sugar
    • 350g Coarse sea salt
    • 2 Teaspoons black peppercorns
    • 2 Teaspoons juniper berries
    • 1 Tablespoon coriander seeds
    • 1 Tablespoon mustard seeds
    • 6 Bay leaves
    • 50g Food-grade potassium nitrate (optional)
    • 1 Large carrot, cut into large chunks
    • 1 Onion, quartered
    • 1 Celery stick, cut into chunks
    • 1 Leek, cut into chunks
    • 6 Garlic cloves, unpeeled
    • A handful of parsley stalks

    Preparation:


    1. Place the sugar, salt, peppercorns, coriander seeds, juniper berries, mustard seeds, four bay leaves and potassium nitrate in a very large pan. Add two liters of water and bring to a boil. Stir until the sugar dissolves and simmer for two minutes. Remove the pan from the heat and set it aside until the mixture is cold.
    2. Use a skewer to pierce the beef all over. Place the meat in a clean and large, heavy duty food-grade plastic bag or a sterilized plastic food container. Add the cold liquid and seal the bag or cover the container. Make sure the meat is covered by the liquid and set it aside in a cool place or the fridge for seven days. Turn the bag every day.
    3. Once done marinating, rinse the meat thoroughly in cold water. Roll up the meat and tie it with string.
    4. Place the beef in a large pan with the rest of the veggies, parsley stalks, remaining bay leaves and garlic. Cover with water, bring to a boil and let the meat simmer for about two and a half hours until meltingly tender.
    5. Turn off the heat and let the meat cool in the cooking liquid.
    6. Once the meat has cooled down, cut it into thick slices or tear it into pieces with two forks before serving.

    Dry salting
    Dry salting or corning is a food preservation method that uses coarse “corns” or pellets of salt to dry-cure meat.
    Irish corned beef is made from beef brisket, but any cut of meat can be corned.
    Salt brine curing
    Salt brine curing uses brine made with salt to preserve meat. In the past, people added salt to the brine until they can float an egg in the liquid.
    However, it is more accurate to use a hydrometer. You can also keep things simple by following a reliable recipe.
    Once the brine is mixed and placed into your preferred container, submerge the meat you want to preserve in the salt brine.
    Note that brine curing usually produces an end product that is less salty compared to food preserved with dry curing. You can also inject brine into the meat to speed up the curing process.
    Basic steps for salting meat

    The salting meat process for preservation is rather straightforward.
    First, you must rinse the fresh meat in cool water. Pour a thin layer of salt, such as kosher salt, all over the meat and rub it in.
    Hang or set the meat out in a cool environment that is under 50 F but not below freezing for several weeks to dry it out. Before cooking the meat, rinse off the salt with water. (Related: 12 Food preservation and food storage techniques you can use when SHTF.)
    If you’re only using salt with no other preservative method, it’s best to use a 20 percent salt concentration on the surface of the meat to effectively kill off most types of microbes and fungi that can spoil the food.

    Accept reality

    From a realistic perspective, recognizing what is in your control is key in handling any of life’s situations. According to experienced prepper Bob Rodgers, this acceptance of reality will help you manage your thoughts and regulate your emotions.
    Think of survival and behave productively

    Rodgers noted that even in the face of problems that you can’t solve, you still must make choices about how to respond. “Whining and moaning (and anything less than good) will keep you in a negative vortex that can rob you completely of your mental strength or quickly lead to demise,” he said.
    Survival is 90 percent psychology,” said Cody Lundin, an internationally recognized professional survival instructor. “When the chips are down, it doesn’t matter how many books on survival you’ve read [because] if you’re a mental and emotional basket case during survival episodes, you’re toast.”
    Stay calm and do breathing exercises

    Your survival depends on how you prepare yourself mentally and emotionally for survival. Rational thinking can save your neck and keep your cool. Practice how to regulate your breath to control your stress and anxiety.
    Learn how to practice quick progressive muscle relaxation exercises to relax your body and center yourself.
    “Learning to control anxiety and panic reactions is a skill that can and should be used in everyday life – but finding yourself in a life-threatening situation is not the time to begin practicing those skills,” said combat psychologist Dr. Neal Olshan.
    Be a leader and believe in yourself

    You need leadership skills because you may find yourself responsible and accountable for people’s lives and safety.
    Stay calm, assess the situation and avoid being complacent. This takes discipline to develop, but it could be as simple as being mindful of the state of the environment around you and generating what-if scenarios and making action plans. Having a Plan B or C to your Plan A wouldn’t hurt either.
    Be decisive

    Weigh the pros and cons to arrive at the best decision possible by evaluating if you will be the only one dealing with the effects of your decision or will other people be affected by it too. The bottom line is you have to stick to your decisions and run with them.
    Find hope and a reason to be alive

    Another fuel that propels a survivor’s mindset is what would motivate you to stay alive in a life-and-death situation. For Steve Callahan, author of “Adrift: Seventy-six Days Lost at Sea,” it was family. Realize that you can do something and you have something worth fighting for.
    Focus on how you can get better rather than focusing on how hard life is.
    Control your mind and your thought processes

    Ground yourself by becoming aware of your thoughts and learn to sift through them with a little mental exercise to figure out which thoughts are good, bad or neutral. Get rid of the negative ones that usually stop you from thinking clearly.
    Breathe if you’re feeling overwhelmed so you can focus and recenter your thoughts. Think of your loved ones – your family and your friends – because you don’t want to see them panicking.
    Develop a personal mantra

    In the psychology of self-preservation, if you say something repeatedly, the brain will do everything in its power to make the repeated mantra occur. Therefore, repeating phrases like “I am a survivor,” “I can adapt” or “I am resilient” can help you survive tough situations.
    Learn the power of focused anger

    Anger is wasted emotion, and uncontrolled anger can lead to dire consequences. However, under certain circumstances, controlled anger activates the basic survival instinct that can alert your body’s physiology to be prepared for a challenge and force your brain to focus on a solution that leads to survival.
    Develop your physical strength

    Once your mind is prepared, you can begin the physical side of things.
    Rodgers mentioned the four main attributes of general fitness: strength (your level of ability to produce a great deal of force to overcome a certain amount of resistance), endurance (your ability to continuously exert a certain amount of force for an extended period of time), stamina (a combination of both strength and endurance) and mobility (being able to securely move all of your joints through their full range of motion).
    Train, practice… train again, practice again

    You need to keep training your mind and practicing if you want to have a survival mindset. Staying sane in a survival situation is a feat in itself. It takes a lot of mental toughness to respond to hostile conditions and make it out in one piece – physically, mentally and emotionally.
    “As a prepper, your focus should be keenly aimed at preparing yourself to become strong enough to be useful to those around you in times of a crisis – having your mind together and your body fit and ready,” said Rodgers.

    RICO PRO 640 Variable 25/50mm Thermal Weapon Sight

    The InfiRay RICO PRO.
    The RICO Pro is new for this year, and for those familiar with the RICO, the Pro uses an updated lens system.[/COLOR]
    This new thermal was designed to do three things: be easy to use, provide the best image possible, and be the “most advanced dual field-of-view (FOV) thermal weapon sight available to the commercial market.”

While virtually every other thermal that exists has zoom, traditionally the magnification would just zoom in on an existing image and it would get more and more pixilated.     RICO HYBRID 640 3X 50mm Multi-function Thermal Weapon Sight

    The InfiRay RICO HYBRID.
    Living up to the name “HYBRID,” the InfiRay RICO HYBRID can take on the role of a thermal clip-on or a stand-alone thermal weapon sight.
    Aimed to provide more versatility and performance, this model provides a 2400-yard detection range and can work with day optics that use magnification up to 10X. Higher magnifications can be used, but the field of view is continually decreased as well as clarity when used past the recommended 10X.
    Potentially the coolest feature of this thermal is the ability to pair it with a 2,000-yard laser rangefinder, custom reticle generator, and an onboard ballistic solver.
    One of the trickiest parts of using thermal is judging distance, so mounting a rangefinder is a great feature, but when paired with a ballistic solver, this is going to be a very potent piece of equipment.
    The RICO HYBRID should be available in Q1 with an MSRP of $7,500.

    InfiRay G-Series
    InfiRay Outdoor added four new thermals to its G-Series lineup to include the GL35, GH35, GH50, and GH50R. Each of these thermals uses InfiRay’s 12 μm detector technology to get a crisp, high-contrast image.
    They all feature onboard recording and a 1024×768 AMOLED display. The GL35 uses a 384×288 sensor and a 35mm objective, the GH35 uses a 640×512 sensor and a 35mm objective, the GH50 uses a 640×512 sensor and a 50mm objective, and the GH35 uses a 640×512 sensor, a 50mm objective, and a built-in laser rangefinder.

    InfiRay MATE mounted directly to the objective of a day scope.
    For those looking to add thermal capabilities to a dedicated rifle with a day scope, the MATE will offer the thermal capabilities you need without changing your setup.
    Using a high-performance 12 μm detector, removable control pad, and distortion-free display, the MATE boasts a “precise and repeatable transition when day turns to night.”

    The MATE can be mounted in front of a day scope using a Picatinny rail, or it can be mounted directly to the objective of the existing scope.
    The InfiRay Outdoor rep was telling me that the first time it is clipped on it takes some calibration to zero it, but after that, it can be removed and installed while maintaining zero. It also includes an external LRF module for those who would like to add an InfiRay range finder down the road.
    The MATE will be available in Q1 with an MSRP of $6,500.
