I like Mexican food a lot (love carne asada). But when I was down in Baja a few years ago, the Mexican food I had there was very different from what we get here in the States. Take my word for it..."Mexican" food in the U.S. is very Americanized.
In Baja, meat is very expensive (and forget about fish)...so most burritos and enchiladas are made with beans, rice and even cactus. I was never able to find guacamole on any menu (guacamole is an American dish), and salsa there is basically just catsup. In even the most "authentic" Mexican restaurants in the U.S., the recipes have been altered to suit Americans' taste.Calderon was absolutely right when he said...."Where there is a Mexican, there is Mexico".

Americangirl, you are right about the Mexican food we get here being very different.
True Mexican food, or working people's food, is so very different from what you get in a Mexican food place. The Americanized Mexican food is called Tex-Mex here - don't know what they all it elsewhere.
Quacamole is not something I have ever eaten with real Mexican food - but just sliced avocado was quite common when we lived on the border. It may be that avocados are too expensive also.
Mexicans, however, are much like we Americans, they are abandoning their traditional cooking for quick and easy dishes.
When the illegals first began coming here, I would notice their grocery carts would be full of fresh veggies - huge sacks of fresh tomatoes and limes. They bought a lot of beans, of course, but no hamburger meat. They always chopped the meat themselves either before or after cooking.
They bought flour and masa to make their own tortillas.
